Potato top pie
An alternative to Shepheard’s pie where you would use lamb or use Beef to have a cottage pie.
A tasty Pork mince pie with a potato and cheese topping. Enough for 2 to 3 persons.

Ingredients for Potato Top Pie.
- 300 g. Minced pork.
- ¼ small onion.
- 2 Cloves of garlic.
- Salt and pepper.
- ¼ Tsp. Dried Parsley.
- ¼ Tsp. Dried Sage.
- ¼ Tsp. Dried Oregano.
- ¼ Tsp. Dried Basil.
- 5 Medium size potato’s.
- 100 g. Mature cheddar cheese.
- 250 ml. Vegetable stock.
- 75 g. Butter.
- 40 ml. Milk.
- ½ Tbsp. Plain flour.
- 1 Tbsp. Vegetable oil.
- 1 cup frozen diced vegetables.
Method.
Turn the oven on at a setting of 200c. Finely chop the onion and garlic cloves.
Peel and boil the potatoes until they are soft enough to mash. Now in a bowl mash the potato, combining the milk and butter until all combined and the potato is as you would like it, I mashed the potato in this so it was a little lumpy to give more texture.
In a medium size pan add the vegetable oil and pork mince on medium heat cooking stirring occasionally for approximately 15 minutes until cooked. Now add in the onion and garlic cook for 2 minutes stirring. Add in the vegetables to the mince stir to combine. Take all the herbs add into the pan with the mince and vegetables and stir cooking just for 2 m or 3 minutes just to wake up the herbs. Add in a little salt and pepper to your taste. Take your vegetable stock add into the pan with the mince stirring in the flour a little at a time and simmer for 5 minutes until the liquid has thickened.
Take the mince and Spoon into a small oven dish evenly on the bottom, I used a dish 180 x 180cm.
Now get your mashed potato and evenly place over the top of the mince. Then grate the cheese over the top of the potato evenly.
Now put your pie in your dish into the pre heated oven on the middle shelf and cook for 35 to 40 minutes until the cheese has browned.
Serve and enjoy.
