These gorgeous blueberry muffins, one delicious treat that the kids will love.
- 2 cups all purpose flour.
- ¾ cup white sugar.
- 1 cup natural plain yoghurt.
- 1 large egg.
- ¼ cup room temperature milk (half or full fat).
- ½ cup of vegetable oil.
- ¼ teaspoon salt.
- 1½ cup of fresh or frozen blueberries.
- 1 teaspoon vanilla essence.
- 1½ teaspoon baking powder.
- ½ teaspoon baking soda.
Prepare the cupcake pan with baking cups.
Preheat the oven to 190c.
Beat the egg in a medium bowl then add in the sugar, whisk till combined.
Add in the oil and yoghurt mix together then the vanilla essence and combine.
Sieve in the remainder of all the dry ingredients into the egg and yoghurt mixture.
Combine and whisk all ingredients, once combined add in the blueberries and fold them in to mix.
Now the mixture is ready to scoop into your prepared cups half fill.
Place in the preheated oven for 15-20 minutes, then allow to cool.
