Ingredients for your casserole.
Ingredients.
- 6 sausages.
- 2 medium carrots.
- 3 medium/large potato’s.
- 3rd of medium size onion.
- 2 cloves of garlic.
- 1 vegetable stock cube.
- 1 tablespoon of cornflour.
- 12 cherry tomatoes.
- 1 handful of kale leaves.
- 1 tsp. Smoked Paprika.
- 1 tsp. dried thyme.
- 1tsp. dried basil.
- 1 tsp. dried sage.
- ½ tsp. salt.
- ¼ tsp. black pepper.
- 1 tbsp. tomato puree.
Step by step guide to your sausage casserole.
Preheat the oven to 170c.
Take the carrots, Peel and slice/chunky cut, then place into your casserole dish.
Peel and quarter the potatoes, part boil for 5 minutes.
Dice the onion and mince the garlic.
Take your mix of herbs, garlic and onion and gently fry for 5 minutes in a little olive oil. Now put this in with the carrots.
Dissolve your stock cube in some hot water.
Chop the tomatoes into quarters, add them in with the carrots with the tomato puree and mix together using a wooden spoon.
Put the part boiled potatoes and chopped kale in with the carrots.
Take your cornflour and add a little cold water to dissolve. Now mix this with your dissolved stock cube. Then pour into the casserole dish and stir ingredients to mix.
Take your part cooked/browned sausages and place into the casserole. Now place this in your pre-heated oven for 1 hour (a little longer if your prefer).
Remove from the oven being very careful as it will be very hot and serve.
