Mushroom soup

Mushroom soup.


A delicious quick and easy mushroom soup.



  • ¼ Onion.
  • 1 Pint vegetable stock.
  • 100g Butter. (Unsalted).
  • 3 Cloves garlic.
  • 2 tbsp Plain flour.
  • 300g Closed cup mushrooms. (Mushrooms use what you prefer).
  • Double cream.
  • ½ tsp. Dried parsley.
  • ½ tsp.  Dried Thyme.
  • ½ tsp. Dried Basil.
  • Salt and pepper.


Method for your soup.


Roughly chop the garlic, onion and mushrooms.

Put the butter into a sauce pan over a medium heat, when hot and the butter has melted put the onion and garlic in and stir cooking just for 2 or 3 minutes.

Add salt and pepper 5 or 6 turns of the mill. Put in the herbs stirring for a couple of minutes. Now taste to see if you require more salt or pepper.

Add in the flour slowly, a small amount at a time until you have used it all, stirring at the same time ensuring to coat all the mushrooms.

After 2 or 3 minutes add in your vegetable stock stirring as you go. Allow the stock to simmer slowly for 8 – 10 minutes stirring occasionally.

Take your pan of the heat and now using a hand blender blend the stock with mushrooms until all smooth.

Now you have blended to a smooth mixture place back on the heat and add in a little cream slowly stirring as you do, 2 or 3 tbsp should do it.

Serve with a little cream drizzled over the top with a little parley, and some garlic bread.
